Anne Lindsay Greer, along with her colleagues Dean Fearing, Robert Del Grande, and Stephan Pyles (chef/owner of Stampede 66 in Dallas) contributed to changes in the cuisine of the U.S. states of Texas, New Mexico, and Arizona. They are considered the main founders of Southwestern cuisine. Using only the freshest ingredients and a range of flavors and techniques that take advantage of our varied heritage, Greer created a vibrant, healthful cuisine that has its roots in the Southwest. Her creative dishes blend elements of Southern homestyle cooking, sophisticated Southwestern fare, Mexican food and Tex-Mex food, as well as Cajun cuisine and Creole cookery. Her meals take advantage of the elegant concept of combining "little meals" and accompaniments; a dish alone is not as true as when it's accompanied by a hot, brightly colored relish to complement flavor and color, or a corn-based bread that completes the main course. Here are almost 300 delectable recipes, starting with appetizers (chilled salmon with three-tomato relish, grilled chicken wings with avocado relish); wonderful soups (roasted bell pepper soup, corn chowder)P; eggs and brunch dishes (poached eggs on Gulf shrimp hash, cornbread oyster shortcakes); main courses (ranging from barbecued beef brisket to chilies stuffed with spicy duck hash and cream fraiche); salads; glori9ous accompaniments (from simple grilled vegetables to a grits soufflé with roasted red bell pepper sauce); breads, and last, a superb selection of desserts (from fruit cobblers to homemade ices and ice creams, cookies and brownies). Greer was a food columnist with the Dallas Morning News, author of "Cuisine of the American Southwest" and frequent television and radio show guest. Hardcover, Ausgabe: 1, Label: Harpercollins, Harpercollins, Produktgruppe: Book, Publiziert: 1988-02, Studio: Harpercollins, Verkaufsrang: 613264.
